Ricotta BOXRicotta is a soft Italian cheese with a mild, naturally sweet flavour, traditionally made from the whey left over after producing mozzarella. This whey, rich in protein, is gently reheated with a little fresh milk added to restore creaminess. From here, acid is added, which causes the remaining proteins to coagulate into delicate, fluffy curds. Since its made from whey and doesnt involve the use of rennet, ricotta isnt technically considered a true
naturally sweet flavour
